Life This Week

Another almost-end to another busy week.  I wish I could say that there was so much fun and excitement and I tried all of these new things and learned so much along the way, but really, this week was much like many others.  I am happy to say I didn’t have to travel any farther than my usual weekly amount, which was nice!  And, there was a night out on Tuesday to the one good Mexican restaurant in West Tennessee with my guy and his coworkers.  Free food and drinks plus a night out is something pretty exciting, now that I think about it.  So, I take it back, the week was somewhat exciting!

I started the week intending to spend more time in the kitchen than usual, but ended up being in there much less than originally thought.  I received my first CSA box – half box – last weekend and was anxious to add some new recipes to my boring regular collection.  I am splitting my weekly box with a friend, and the first week had many items that aren’t too unfamiliar to me, so they were easy additions to my already favorite dinners.

Nachos with fresh sauteed leeks and homegrown tomato garnish.  Eggs with plenty of bell peppers, tomatoes, and leeks.  Venison roast with veggies and potatoes, plus some homemade eggplant bread.  Yes, you can make bread with eggplant!  I was a little unsure of how and what to make with the eggplant.  My boy insists he does not like it and there is no way I will get my guy to even look at taste eggplant, but put it in some bread and…  Hopefully, I will not be the only one eating the bread!

  1. I am so intrigued by this eggplant bread! Is it sweet-ish, like zucchini bread, or savory? I suppose if the men in your life aren’t feeling it, that just leaves more for you! 🙂
